The answer to this question may differ from person to person. But here is a more consolidated definition for it. Search Engine Optimization is a process of making changes that will make it more accessible to the search engines.
A common perception that a lot of people have is that SEO is about fooling search engines, which is not at all correct. It is about understanding the elements that a search engine looks for on a page to help determine its relevance with the search term.
Three key elements that Search engine spiders see in a website are:
Domain Name: Having keyword in a domain name does make a considerable difference. You boost your chances of getting yourself ranked higher if you have your targeted keyword in your domain name. But saying that do not buy multiple domains with the idea of getting multiple listing. It is more than likely that doing so will fetch you penalty in all the major search engines.
Title Tag: Title tag for all you pages are very important. This is there in the head section of a page. It should include keyphrases related to that page which will help the search engines decide what that page is about.
Meta Description and Meta Keyword: Another very important element of a webpage. Meta description is considered to be more important by many experts. It includes a very brief explanation on what that page is about. Meta Keywords should include all the major keywords that page relate to.
